“Premium – Reserva de 2005”, the most expensive and supportive cured ham
Arturo Sánchez e Hijos, the enterprise from Salamaca, presented last October the 7th in Barcelona, together with the chef Paco Pérez, their Iberian acorn cured ham called “Premium – Reserva de 2005”, a real gastronomic gem of a ham which is also the most expensive and supportive ham in the world.
This delicacy, produced from pigs raised in their natural habitat during three years and exclusively fed on acorns and grass, costs € 4,000. However, it demonstrates its solidarity with the donation of 25% of this amount –€ 1,000 per sold piece– to Fundación Raíces.
“This product means the culmination of a many-year-long work and effort by three generations and it is, in the end, a great chance to help the most unprotected ones”, said Arturo Sánchez himself, the owner and soul of this small family business set up in Guijuelo, Salamanca.
Sánchez e Hijos bet on the elaboration of first rate products of Iberian pork. They achieve that thanks to the best raw material, a handcrafted elaboration and a slow curation in natural drying places and cellars.
In fact, their Premium ham spends its first year in natural drying places, curing with the air in the Béjar and Gredos mountain ranges. The almost next five years are spent with the pieces resting in natural cellars in order to obtain aromas and flavours that make this ham become a real treasure with two montaneras.
“It is a really extraordinary product. But the most important thing is the effort made by this family business when donating € 1,000 per sold piece for a good cause. It may seem very expensive but the solidarity that they demonstrate is much more important”, said the chef Paco Pérez.
Pérez, who owns a Michelin star with his Restaurant Miramar in Llançà (Girona) and another one with the wine bar in Hotel Arts in Barcelona –where the presentation took place–, is the image for Arturo Sánchez and was also the first high cuisine chef in trusting their product.
Fundación Raíces was born in 1996 with the firm purpose of favoring the integration of socially excluded or marginalized children, adolescents and their families. Fundación Raíces has favored this year the integration in society of more than 400 adolescents, demonstrating that they respond when they are given an opportunity.
Arturo Sánchez e Hijos will afford from now on thousands of opportunities to the neediest ones. With their donations, they have become the first supportive enterprise in the gastronomic world working in favour of these people.
Juan Ignacio de la Mata, secretary of Fundación Raíces, received this year the Childhood Rights Special Prize (Premio Especial de Derechos de la Infancia), awarded by the General Council of the Spanish Legal Profession (Consejo General de la Abogacía Española, CGAE).
