Under the title “Leadership, motivation and personal growth. Uncertainty and challenge”, the 14th and the 15th of March took place the third chef professional meeting, Diálogos de Cocina 2011 (literally meaning “cuisine conversations” in Spanish), which was held at the Miramar Palace in San Sebastian.

Some of the best experts in their disciplines of the world delivering wonderful speeches, an audience set up by prestigious professionals wishing to learn, a question-and-answer session with Quique Dacosta asking the biologist Pere Puigdomènech about the organoleptic taste or the philosopher José Antonio Marina confessing to being a tomato producer… Put all these ingredients together and you will obtain a cocktail called Diálogos de Cocina.

This is a biennial congress organized by Euro-Toques, the European chefs association, and boosted by its vicepresident, Andoni Luis Aduriz, and last year it joined the Basque Culinary Center. The first Diálogos de Cocina congress took place in 2007 and it was devoted to the international signature cuisine. In 2009, the thematic backbone was sensoriality, the five senses. This year, the most worrying topics for the professionals of this sector came back: “Leadership, motivation and personal growth. Uncertainty and challenge”.

During two days, this international congress was the place for chefs and professionals from other related disciplines to meet to share and reflect on several matters from numerous points of view. With this purpose, there were round tables, lectures, debates, and talks, accompanied by meals sponsored by different brands of this sector, where all the attendants could debate.

The lecturers in Diálogos de Cocina 2011 were: Mario Alonso Puig (surgeon, professor and consultant), Azucena Vega (one of the most important coachers in Spain), José Antonio Marina (philosopher), Pere Puigdomènech (physician, biologist and Director of CRAG), Nigel Barlow (one of the most distinguished coachers in the world), Martin Seligman (President of the American Psychological Association and the driving force behind the so-called positive psychology), Fidel Delgado (hospital psychologist and personal counselor), Luis Huete (professor at IESE and consultant), Toni Segarra (probably the most important publicist in Spain), Luis Rojas Marcos (psychiatrist and former Chief Executive Officer of the New York City Health and Hospitals Corporation), Quique Dacosta (Chef of the Quique Dacosta restaurant) and Massimo Bottutra (Chef of the Osteria Francescana restaurant).
