1st International Rice Conference in Cullera (Valencia) 2007

Cullera (Valencia) hosted the most important international gastronomic event ever celebrated in Spain regarding the world of rice. The cereal grain was the star of debates regarding its origin, its economic impact, evolution, agricultural development and nutrition… but above all its presence in high level national and international cuisine.

The conference, which was sponsored by Ferran Adrià, offered live cuisine demonstrations by Spanish chefs Quique Dacosta, Raúl Aleixandre, Paco Roncero, Dani García, Fermí Puig and Marcos Morán; Italian chefs Carlo Cracco and Gualtiero Marchesi, Japanese chef Hideki Matsuhisa and Chinese chef D. Wah Wang. The renowned Juan Mari Arzak and Pedro Subijana made their appearance and performed their demonstrations with the aid of audiovisual technology.

On the other hand, the scientific and agricultural analysis was presented by experts such as Dr. Ingo Potrikus from the Institute of Plant Science in Zurich; Dr. Manuel Serrano Ríos, Medicine Professor from the Complutense University of Madrid, Professor Harro Maat from the Wageningen University Technology and Agrarian Development group and Dr. José R. Cabo, Professor from the University of Biochemistry and Molecular Biology of Valencia, among others.
